    Easy Strawberry Cheese Danish Pastry Bites

    Satisfy your sweet tooth with Easy Strawberry Cheese Danish Pastry Bites. Made with bite-sized Puff Pastry Cups, they’re so easy to make and so delightfully scrumptious, allowing for moderation, as well!

    My sweet tooth sometimes gets ahold of me and won’t let up until I satisfy that craving for whatever particular sweet treat I’m craving at the moment. I like to think I get it honest, per my grandmother, who had a mean sweet tooth.

    But let me tell you, moderation is key and plays a role in this recipe… Bite-sized treats are perfect when trying to satisfy a craving yet still not gorge oneself on sweet goodies from above.

    When I cooked this up, I knew I wanted something similar to a cheese danish. Shopping for ingredients led me to these itty bitty Puff Pastry Cups.

    Aren’t they cute? They are awesome! I totally see cream puffs in our future with these bad boys.

    These bite-sized morsels of creamy cheesecake-esque goodness are delightfully easy to make, and here’s how.

    First things first, bake the Puff Pastry Cups according to package directions. When done, after about 20 minutes, immediately remove from oven and press center of each cup down with the tip of a wooden spoon handle. Then fill each cup with a spoonful or dollop of the cream cheese filling you mixed up while they were baking. Bake again for about 15 minutes at a lower temp (exact instructions are in the printable recipe below).

    Once filling is set, remove from oven and allow to cool for 5-10 minutes. Then top with a small dollop of strawberry jam, and lace with a simple powdered sugar icing. Of course, store them in the fridge until ready to serve.

    Easy Strawberry Cheese Danish Pastry Bites

    Satisfy your sweet tooth with Easy Strawberry Cheese Danish Pastry Bites. Made with bite-sized Puff Pastry Cups, they’re so easy to make and so delightfully scrumptious, allowing for moderation, as well!

    Pastry Bites:

    • 1 pkg. Pepperidge Farm Puff Pastry Cups
    • 1 8 oz. pkg. cream cheese
    • 3 tbsp. granulated sugar
    • 1/2 tsp. vanilla
    • 1 egg yolk
    • Strawberry jam

    Icing:

    • 1-2 tbsp. salted butter (melted)
    • 1/2 tsp. vanilla
    • 1 cup powdered sugar
    • 5 tbsp. heavy whipping cream
    1. Set Puff Pastry Cups on ungreased cookie sheet. Follow package directions, baking at 400° for about 20 minutes.
    2. Meanwhile, mix cream cheese, sugar, vanilla, and egg yolk ’til smooth and creamy.
    3. When done, remove Pastry Cups from oven and immediately press center of each cup down with tip of wooden spoon handle.
    4. Spoon cream cheese mixture into each cup, adding a small dollop in each.
    5. Bake at 350° for 15 minutes or until filling is set.
    6. Remove from oven and allow to cool for 5-10 minutes.
    7. Top each danish with small dollop of strawberry jam.
    8. Mix icing ingredients together until smooth and creamy. It will have a thin consistency.
    9. Drizzle each pastry bite with icing.
    10. Store in fridge ’til ready to serve.
    11. Serve and enjoy!

    Homemade Mexican Pizza with All the Fixin’s

    When it comes to types of food, I could eat Mexican day in and day out. Dan’s mentioned getting me a shirt that says, “I’m just here for the queso.” It’s so true. Enchiladas, tacos, fajitas, you name it, it’s all good and worthy of breakfast, lunch, and dinner, in my opinion.

    Of course, a hearty Mexican Pizza, loaded down with all the fixin’s, rates really high on my list of favorite meals; it’s also just one of the many meals my kids love.

    This particular Mexican Pizza is loaded with the fixin’s of your choosing, including but not limited to lettuce, tomatoes, and avocado.

    It’s easy and simple to make, but I wouldn’t call it a quick meal. It takes a little time to prepare, especially if you prefer to take your time.

    I find myself way less stressed when I can go in the kitchen and just take my time. Turn a little music on, gather all my ingredients, and just enjoy the process of putting together a meal, all the time looking forward to eating and enjoying it with my family.

    So, How to Put this Mexican Pizza together…

    1. Sandwich two small (taco-sized) tortillas together with refried beans.

    • 1 lb. ground beef
    • Salt & Pepper
    • 1 1/2 cups picante sauce
    • Pinch of brown sugar
    • 1 can refried beans
    • Small flour tortillas
    • 4 oz. extra sharp cheddar
    • 4 oz. Colby Jack
    • 1/3 head green leaf lettuce
    • 5 medium tomatoes
    • 2 avocados
    • Sour cream
    1. Pre-heat oven to 325°.
    2. To form each pizza, sandwich two tortillas together with a layer of refried beans, about 1 tablespoonful.
    3. Add another layer of refried beans to the top of the tortillas, about a tablespoonful.
    4. Cook ground beef, seasoning with salt and pepper, and drain well.
    5. Add picante sauce and pinch of brown sugar to ground beef, mixing well and heating through.
    6. Layer 2-3 spoonfuls of the ground beef mixture onto top of tortillas.
    7. Shred cheese and add to top of ground beef mixture on pizzas.
    8. Bake at 325° on ungreased cookie sheet for about 15 minutes or until heated all the way through and cheese is melted.
    9. Meanwhile, wash and chop lettuce and tomatoes; wash, peel, and chop avocados. Set aside in serving bowls.
    10. When fully cooked, remove pizzas from the oven and load your pizza down with all the yummy fixin’s.
    11. Serve with sour cream and enjoy.

    Homemade Dinosaur Valentine Box (Shoebox Craft Idea)

    How to make a homemade dinosaur Valentine box from a shoebox, the perfect Valentine’s Day box idea for elementary school kids. Pair with printable dinosaur Valentines to give to classmates, friends, and loved ones!

    My Jaden happens to love dinosaurs. Even though we don’t really have a Valentine’s Day party on the schedule, I still thought it’d be fun to make him a special dinosaur Valentines box he can put his Valentines in but also turn into a keepsake/treasure box after Valentine’s Day has passed.

    I can remember making a special Valentine box for classroom Valentines every year when I was in elementary school. In fact, I still have one of those Valentine shoe box ideas in my cedar chest.

    It just so happens I had a couple of shoeboxes, waiting to be used for a special shoebox craft or project of some sort, hangin’ out in my craft closet. When asked what dinosaur Valentine box he’d like to have, he chose his favorite, of course… a Triceratops Valentine box, a great way to use up old shoe boxes and the perfect place to stash your Valentine cards!

    Materials and Supplies Needed for a Homemade Dinosaur Valentine Box:

    To make this DIY dinosaur Valentine box, you’ll need a few simple supplies, most of which you can probably find at the dollar store or craft store.

    How to Make a Dinosaur Valentine Box

    Note: This is a fun way for kids to get in on the crafting with this DIY dinosaur Valentine box, though they will need supervision, as it does require using a glue gun, box cutters, and craft knife.

    I’ve had mixed feelings over this dinosaur Valentine’s Day box. Before the eyes or any other features were added and it was just the box with a crest, Dan mentioned it looked like Lisa Simpson. After it was completed, I kinda thought it looked like a razorback… I think it’s the red (the color Jaden chose) and the fact that we used to live in Arkansas, home of the Razorbacks, so we saw them everywhere all the time.

    Either way, it’s a Triceratops Valentines box, and I’m stickin’ to it. So, here’s how to make this cute li’l guy.

    First Make the Triceratops Crest

    The first step in creating a Triceratops Valentine box is to cut the dinosaur’s crest from the poster board. The size of the shoebox will determine how large you need to make the crest.

    To make the dinosaur’s crest, you’ll need to follow these steps…

    1. Cut a large circle from the poster board, however large you want your crest to be, again depending on the size of your shoebox.
    2. You’ll need to cut flaps on the bottom edge of the crest to prep it for gluing onto the top of the box.

    1. Cut large triangles all around the outside edge of the crest, resembling the crest of a Triceratops.
    2. Decide on placement of the crest, and use your box cutters to cut the lid of the shoebox in half, right in front of where the crest will sit. (We decided to cut our lid in half, so the crest remains stationary and is less likely to get torn up; and also because we used a shoebox with a flip-over lid.)
    3. Next, use your hot glue gun to glue the back part of the shoebox lid down; that way, it can’t be lifted, thus maintaining safety of the crest.
    4. Then just glue your crest in place, using the flaps you created, to do so.

    Hardest part and best part of the craft is over… Whew!

    Painting Your Homemade Dino Valentine Box

    Now for the fun of painting and decorating, and this is where kids can especially get involved in the creative, crafty fun.

    Paint your box whatever color you choose. We chose to use red poster board for the crest, which pretty much matched the paint that Jaden chose.

    If you get a little paint on the poster board, that’s ok… Crafting is messy; embrace it! Fair warning: It may take several coats of paint to cover any writing on the shoebox. 

    You can also paint the tips of the crest a different color if you choose. We went with brown on the tips.

    Decorating Your Dinosaur

    Once the paint is dry, it’s time to add the finishing touches. This is where the egg carton and cardboard cones come in.

    The lid of your egg carton should have an edge with round shapes on either end. When I saw this, I saw the perfect platform for the wiggle eyes to rest on.

    1. Cut one whole side with the 2 round shapes out of the egg carton, leaving the flat edge around the bottom.
    2. Paint this to match your box.

    1. Once the paint has dried, add hot glue around the bottom edge, and put it in place on your box lid.
    2. Then glue the googly eyes in place with a couple dots of glue.

    1. You’ll need three horns. The two cardboard cones will work for the upper horns. Cut a rounded piece out of one side of each cone, so the horns will point outward from the box rather than straight up, when placed on the dinosaur’s face.

    1. Add glue around the edge and glue in place, one horn on either side of the eyes.

    1. For the third horn, you’ll need either a smaller cardboard cone or the pointed piece that sticks up out of an egg carton, which is what we chose to use… It’s all about using what you have. Cut the rounded cone shape out of the egg carton.
    2. Add glue around the bottom edges of the cone, and place it on the edge of the box lid, centered between the eyes.

    1. Lastly, the mouth… Use one of the edges you cut from the cardboard cones for the bottom part of the mouth, glueing the piece in place beneath the lid on the box itself.
    2. Shape one of the egg carton bowls into a beak of sorts with scissors. 
    3. Glue the “beak” into place on the edge of the lid itself, beneath the single horn.

    Making this cute Valentine’s Day box is so much fun, especially when you’re done and now you get to use it to hold all your Valentine’s Day cards.

    So This Is Hyperemesis Gravidarum | My Story

    For 2-3 months now, I have tried to put this post into words; it’s been a difficult one to share. My husband’s encouraged me numerous times to write our story, but I’ve had to really mull it over and think about whether I wanted to share something so personal. He’s also pointed out that I tend to downplay things that I’ve gone through, mainly because I don’t want to appear as though I’m being over-dramatic or feel vulnerable; I have to agree. In all honesty, it’s just not something I really like to talk about but know it needs to be talked about, especially the more and more I read the stories of other women who have gone through far worse than what I’ve had to go through. Hyperemesis Gravidarum is something I never want to re-live, hoped I’d never have to re-live, even in subsequent pregnancies. But I did. And this is my (or really our) story.What Hyperemesis Gravidarum is, my HG story, the effects of HG, and encouragement for those experiencing HG, including information about the HER Foundation.

    What Is Hyperemesis Gravidarum?

    According to the HER Foundation (the world’s largest grassroots network of hyperemesis gravidarum survivors and leading site for HG information on the Internet), Hyperemesis Gravidarum, otherwise known as HG, is a severe form of nausea and vomiting in pregnancy. It is generally described as unrelenting, excessive pregnancy-related nausea and/or vomiting that prevents adequate intake of food and fluids. If severe and/or inadequately treated, it is typically associated with: loss of greater than 5% of pre-pregnancy body weight (usually over 10%), dehydration and production of ketones, nutritional deficiencies, metabolic imbalances, and difficulty with daily activities.

    First and foremost, let’s get something straight. HG is not your typical morning sickness. It’s not the same thing, nor can the two even be compared. It’s much more severe than your run-of-the-mill pregnancy sickness. I’ve seen shows on television try to depict HG in a seemingly lesser light than what it is; they always portray it as your typical, everyday morning sickness. It’s described as severe morning sickness, when in fact, it’s a different beast all its own. HG has been in the headlines with Kate Middleton, and even Kelly Clarkson (who also portrayed it as severe morning sickness, much to the dismay of many an HG survivor). However, as evidenced by real life stories from everyday women, it’s a proven fact that many doctors out there simply don’t know enough about it to adequately treat it. Consequently, many women are sent home to suffer alone, untreated and left to try to deal.

    As my husband has described our experience with HG, “It was a hellacious time.”

    My HG Story

    I was once one of those women sent home, left to try to deal. During my first pregnancy, there was no Facebook, there were no online friendships that I knew about (besides email), no support groups. This was when I first learned what HG really is. It affected me physically, emotionally, and mentally, both during my pregnancy and, to a degree, postpartum.

    I remember being so excited that we were going to have a baby, our first, our sweet Jacob! I’d read all about morning sickness, but neither of us had any idea the ride we were in for. I just remember being in that honeymoon phase, expecting pregnancy to be this beautiful, wonderful event in our lives. That picture changed drastically over the coming days and weeks.

    I remember waking up extremely ill, early one morning. Nothing would stay down… I could hardly eat or drink a thing. Food was revolting, just the mere mention, thought, or smell of it. I became so dehydrated that we made our first ER visit, and I just remember the doctor looking at me and saying that this would all be over at 12 weeks, that it was “just morning sickness” and blah blah blah. I thought to myself, “How can I even endure that many more weeks of this?!” Nothing was done, and I was sent home, unable to really function at all. I tried every natural remedy I could possibly find to try that was safe for me and baby; none of them helped, even a little. And don’t even dare to say the word ginger to me… Nope.

    I became sicker and sicker, my husband having to try to force me to eat dry toast, buttered toast, mustard and cheese (one of the only things I could get down), also forcing me to drink anything he could get down my throat or even forcing ice chips. I’d eat or drink something, and back up it would come. He describes me at that time as having simply given up, feeling like I was going to die; I can honestly agree. My body wasn’t getting adequate nutrition or fluids to support both myself and my baby. Many more ER visits were to come because my body was simply so dehydrated, and I was losing so much weight. By the time we’d leave the emergency room and get back out to our car in the parking garage, I was already puking again, even though I had nothing left to come up, a bucket or bin my constant companion. It was horrible. Medicines were prescribed, none of which worked very well to help alleviate my symptoms. I took them ’round the clock, subsisting on cheese and mustard sandwiches to get the meds down, because it was all I could stand to eat most of the time.

    And then during one particular ER visit, doctors began to realize this was no ordinary morning sickness. I was placed in a side room of an already overcrowded hospital and fully hydrated. I remember being sent to see a woman doctor, who honestly became my champion… I don’t remember her name, nor do I remember a lot (Dan and I both agree that we’ve both blocked out a lot of this time), but I do remember her being outraged that nothing had been done. She was very concerned about my weight (I believe I had lost 20-24 pounds, more than 15% of my body weight at that time), and I remember her concern over deficiencies and imbalances that were beginning to rear their ugly heads. Electrolyte imbalance, including potassium, was wreaking havoc. My champion doctor began to talk of sending me home with a permanent IV line, if things did not begin to clear up, with a home health nurse visiting on a regular basis. They’d begun to teach Dan what he would need to do to change out my IV bags and keep fluids going into my sick and wasting away body. 12 weeks had come and gone, all my hope gone with them. We both remember feeling, though, that finally, FINALLY, someone was taking us seriously. I was diagnosed with Hyperemesis Gravidarum, the first I’d ever heard of this ugly illness. I was prescribed Phenergan suppositories (so much fun), which is when my turnaround began. Instead of constantly throwing up, I was finally resting; I still wasn’t eating or drinking a lot, but the Phenergan made me sleep. Thankfully, a permanent IV at home was not needed. Somewhere around 15-20 weeks, my time with HG began to abate somewhat, though I still fought nausea on a daily basis for some time afterward. Nausea, as uncomfortable as it may be, I could handle… Constant dehydration, loss of weight, and complete inability to function were something else altogether.

    Not only did HG affect me physically, but it affected our entire lives, leading to a huge life change and cross-country move. My husband had lost his job because of that last visit to the ER; his boss was not happy that he chose to take me to the emergency room, even though that visit could very well be the one that saved my life. So, financial implications began to hit us head on. We were in a rut that would take us some time to dig our way out of.

    Thankfully, we gave birth to a beautiful, healthy baby boy.

    6 years later (because it took us that long to work up the courage to get pregnant again), my second pregnancy had some nausea but nowhere near what I endured the first time around. I was even able to work the first few months, a blessing in and of itself. I will say that I stayed away from pre-natal vitamins altogether, a fact which probably led me to being dangerously anemic when our sweet Jaden was born.

    And then there’s my third pregnancy, which I am currently in. Hyperemesis returned at 5 1/2 weeks with a vengeance, and let me tell you, the flashbacks of that first time ’round were not fun for either myself or my amazing husband. We both began to panic, remembering what it was like and knowing how many more weeks it would take to get through. This time, though, was different because we knew what to expect, and we’d already informed my doctor at the time (now we’re seeing a midwife who is also very understanding). We immediately called and having already shared my history, we were straight away given a prescription for the highest dose/frequency of a new medication called Diclegis, a time-released medication. Did I want to take medication? No. No, I didn’t. But desperate times… In less than a week’s time, I’d already lost 8-9 pounds. Again, I’d tried all the natural remedies and knew that I was going to need a little help to get through this.

    I won’t say that the medication took away all of the sickness. It didn’t. But at least, after starting on the medication, I was miraculously able to keep food and fluids down and avoid the hospital altogether, a HUGE blessing. I was still in bed most of the time for a good 8 weeks, God bless my guys for helping me hold down the fort. I still had to force myself to eat and drink much of the time. We would work on school from my bed, ’cause when you homeschool, the show must go on and you’re still the teacher. My bedside table became command central for anything that just couldn’t wait. Every movement, every noise, all these little things that ordinarily don’t bother you, instantly become triggers. A noise, for me, could trigger a trip to the porcelain god, or in my case, a bucket. All I wanted was a quiet room, no movement of any kind, no flashing. Even to look at my phone would cause the nausea to bubble up inside; but I’ll tell you, that was the difference for me this time ’round, because this time I had support in the way of other friends who were going through the same thing and an HG support group I’d found on Facebook, through the HER Foundation. The thing that really got me through was prayer. Several nights, I would lay in bed, praying not just for myself, but for others I knew who were going through the same thing, calling them out by name in my prayers. I would also think about the end reward… this precious little baby that’s growing inside of me.

    Around 12-14 weeks, the severe nausea began to somewhat subside during the day, enough that I could function again. I still deal with nausea off and on, but as I said before, I can handle a little bit of nausea, compared to everything we went through before.

    All of that said, I count myself as one of the lucky ones, because many women with HG don’t experience relief until baby’s born.

    The Effects of HG

    Many women who endure HG end up having to get a PICC line placed for nutritional needs. They endure complications like encephalopathy, nutritional deficiencies, metabolic imbalances, and so much more. It can affect a mother’s ability to breastfeed after baby is born. In some cases, sickness can become so severe that loss of baby’s life, miscarriage, occurs.

    The implications of HG aren’t just physical, though. As I’d previously mentioned, it can involve loss of job and loss of financial security, the last thing a pregnant woman needs to worry about. But it also has psychological repercussions. Pregnancy became much feared by both myself and Dan for a very long time; it was something we had to work through together.

    There are other implications, as well. As much as I hate even the thought of abortion, there are countless stories where it has come to this for those who are severely and intensely sick for such a long period of time. It’s not something to be judged, but something that should raise anyone’s level of compassion for the toll that HG takes on a woman, enough of a toll that she would take such a desperate measure. When I learned this fact, my heart just broke, one of the many reasons I’m finally sharing my story and hoping to raise at least some awareness around HG.

    Doctors and midwives need to be aware. More research and study need to be done, in order to facilitate a positive change. Family and friends need to know what their pregnant wife, mom, daughter, daughter-in-law, or friend are going through so they can reach out. Just one person reaching out with an offer of help, prayer, or compassion makes all the difference in the world. Bosses need to know the hell their employee is going through. It affects all immediate family members too. Though it’s a shorter-lived illness than something like cancer, for instance, it doesn’t make it any less of an illness. Believe me when I tell you that this time of coping with HG is one of the loneliest experiences a woman can ever go through. It’s such a bittersweet time… In one sense, you feel elated to be having a baby; but in another sense, you feel utterly unable to deal and completely miserable, which then leads to a feeling of guilt because you want to feel happy and blessed, but instead you feel like you could die.

    Now I’ve shared my story… but it’s not just my story. It’s also the story of thousands of other women who have gone through this very same thing and worse. This is for all of us who are HG survivors. This is for all the babies who were lost, due to Hyperemesis Gravidarum. THIS IS FOR A POSITIVE CHANGE.

    Making a snowman in a pudding cup is actually quite simple and leaves a LOT of room for creativity. And this recipe is definitely going on my list of The Best Christmas Recipes for Your Holiday Celebrations.

    Here are the supplies you’ll need.

    Supplies for Snowman in a Pudding Cup

    Snack Pack® pudding cups
    Extra large marshmallows
    Large marshmallows
    Mini marshmallows
    Various chocolate candies (for the hat)
    Fruit rope (for the scarf)
    Frosting in black and orange (or whatever colors your heart desires)
    2 ordinary round cake tips

    Instructions for Creating a Snowman in a Pudding Cup

    The first step is to remove the lid from each Snack Pack® pudding cup you’ll be using. We used chocolate and butterscotch, mainly because they’re our favorite flavors. Clean the top edge of the pudding cup with a paper towel.

    When beginning a snowman, you can use an extra large or large marshmallow for the foundation.     Chocolate Lover’s Christmas Light Cookies

    Christmas light cookies are filled with mini milk chocolate M&M's Minis, semi-sweet dark chocolate M&M's, and semi-sweet chocolate chips. They’re made for the chocolate lover in you.

    • 1 cup 2 sticks unsalted butter
    • ¾ cup granulated sugar
    • ¾ cup brown sugar
    • 2 eggs
    • 2 tsp. vanilla extract
    • 2¼ cups all-purpose flour (measure before sifting)
    • ½ tsp. baking soda
    • 1 heaping tsp. salt
    • 1/2 bag (6 oz. semi-sweet chocolate chips)
    • 1 bag Semi-Sweet Dark Chocolate M&M’s Baking Bits
    • 3/4 bag Milk Chocolate M&M’s Minis Holiday Baking Bits
    1. Pre-heat oven to 375°.
    2. Cream butter and sugars together. It’s up to you whether you use light brown or dark brown sugar, depending on your preferred cookie texture. I prefer light brown because it lends to a more golden, raised cookie with crunchy edges and a chewy, slightly cake-like center.
    3. Add eggs and vanilla, mixing well.
    4. Sift flour, baking soda, and salt.
    5. Add sifted dry ingredients to creamed mixture, mixing well.
    6. Add chocolate chips and chocolate candies, thoroughly mixing into dough.
    7. At this point, nuts are an optional add-in, but I always make without.
    8. Drop by heaping teaspoon onto cookie sheet.
    9. Bake at 375° for 10-11 minutes, or until cookies are lightly golden and done.
    10. Serve and enjoy!

    Originally, I meant to get this recipe up in September, but when you’re utterly and completely sick to your stomach for weeks (er, months) on end, food is the absolute last thing you EVER want to look at, let alone write about unless you absolutely have to.

    While I’m still dealing with the yucks somewhat (oh, but I know the end reward will be worth it), I’m calling it and posting this recipe anyway. And you know why? You deserve to make this recipe while you’re still craving caramel apple everything and all the apple recipes.

    Caramel Apple Donut Holes are the perfect fall treat, coated with a Krispy Kreme copycat like icing that’s flaky and oh so scrumptious.

    Back when my taste buds were still in good working order, these donut holes were AH-MAZING.

    These are a quick rise yeast donut, fried in a deep fryer. I know, not the healthiest, but every once in awhile, it’s ok to enjoy a simple treat. Simple ingredients led to a delicious fall treat that I honestly can’t wait to make again.

    In fact, I may take this recipe, switch it up, and make a fantastic baked sweet bread. Who can tell? Just let me get my tummy back in order, and a recipe will be coming your way.

    Let’s just talk about the icing, though. I happen to be a fan of Krispy Kreme and the wonderful, flaky, melt-in-your-mouth icing they use on their glazed donuts. In trying to emulate the texture and consistency of their icing, this icing turned out quite well. Quite the copycat if I do say so myself.

    Caramel Apple Donut Holes

    Caramel apple donut holes are a quick rise yeast donut, fried in a deep fryer and glazed with a thin, flaky, melt-in-your-mouth icing that's oh so delicious!

    Donut Holes:

    • 4 1/2 cups all-purpose flour
    • 2 tablespoons quick rise yeast
    • 2/3 cup cane sugar
    • 3 teaspoons salt
    • 1 tablespoon apple pie spice
    • 3 tablespoons unsalted butter (softened)
    • 1 cup whole milk
    • 3 large eggs
    • 1/2 teaspoon caramel extract

    Icing:

    • 4 tablespoons salted butter (softened)
    • 1 teaspoon vanilla extract
    • 1/2 teaspoon caramel extract
    • 4 1/2 cups powdered sugar
    • 1/4 cup whole milk
    • 1/2 cup apple juice
    1. Whisk all the dry ingredients, including the flour, yeast, sugar, salt, and apple pie spice, together.

    2. In a separate bowl, mix together the softened unsalted butter, milk, eggs, and caramel extract.

    3. Blend the liquid ingredients with the dry ingredients.

    4. Let the dough rise for an hour or more, 'til doubled in size.

    5. Roll the dough out onto a floured surface, and cut with donut/donut hole cutter. (TIP: If you don't have a donut hole cutter, cut the top off a plastic soda bottle and wash. Use the opening of the soda bottle to cut out donut holes, works like a charm!)

    6. Place the donuts on a cookie sheet and let rise 'til doubled in size.

    7. Meanwhile, mix up the icing, blending all the ingredients together.

    8. Fry the donuts and donut holes in a deep fryer set to 350° F, 'til each donut hole is cooked thru and golden. You can also fry them in a skillet in a couple inches of canola oil.

    9. Let the donuts and donut holes drain on paper bags.

    10. While still warm, dip each one in the icing.

    11. Set on a rack over wax paper to drip and cool.

    12. Once they've cooled enough to eat, they're ready for you to enjoy!

    Chocolate Whoopie Pies from Grandma’s Kitchen

    Let me share with you how to make my grandma’s recipe for chocolate whoopie pies. These soft chocolate cookie sandwiches with vanilla buttercream filling are a family-favorite dessert recipe she taught us all how to bake.

    It’s no secret that I love my grandma’s recipes. Both my grandmas were wonderful cooks, and the heirloom recipes they passed down mean everything to me. This chocolate whoopie pie recipe has been in my family for over a century.

    Sometimes I even love to make this version of heart shaped whoopie pies for Valentine’s Day.

    Why You’re Going to Love These Cookies

    • They’re so delicious. Soft and cake-like, they’re sandwiched together with a creamy vanilla buttercream filling.
    • You’ll love how easy they are to make. There’s nothing to them. Mix up the cookie dough and bake, and mix up a quick filling while they’re cooling. Easy peasy.
    • They require minimal ingredients you likely already have in your pantry.

    Ingredient and Substitution Notes

    • Butter – You’ll need unsalted for the cookie dough, and salted butter for the filling.
    • All-Purpose Flour – While these are made with regular flour, I make them gluten-free all the time; I just use my favorite gluten-free all-purpose flour to make them. You can make them both ways with no issues whatsoever. Just use a good flour.
    • Unsweetened Cocoa Powder – I prefer Hershey’s unsweetened cocoa powder, but you can use whatever you have on hand, as long as it’s unsweetened.

    Let’s Talk Quick about What Whoopie Pie Filling is Made of

    You have options when it comes to making your whoopie pie filling…

    • Most whoopie pies include marshmallow fluff in the filling.
    • My great grandma, who traveled to Missouri by covered wagon, used a cooked icing she made with 1 cup sugar, 1 or 2 tbsp. butter, 1 tsp. vanilla, a dash of salt, and enough cream to set this mixture. She’d cook it to soft ball stage and ice the cookies on the underside, putting together two cookies like a sandwich. She would make these and have them ready for an after school snack when my mom and her sisters would arrive home from school via the school bus. She stored them in a metal roasting pan with a lid that was all bent up, and she kept it in the pantry.
    • You can use a simple cream cheese frosting.
    • I prefer to use a whoopie pie filling without fluff, my favorite sugar cookie icing I’ve made since I was a kid. It includes powdered sugar, salted butter, vanilla, almond extract, and milk or heavy whipping cream. This is pretty much what my grandma used too.

    How to Make Chocolate Whoopie Pies

    Baking chocolate gobs is a 2-step process. First, cookies, then the filling.

    First Bake the Cookies

    1. Cream (or mix) the butter and sugar together.
    2. Then add the eggs and vanilla, mixing well.
    3. Whisk or sift all the dry ingredients, including the flour, baking powder, cocoa powder, and salt, together.
    4. Mix the dry ingredients into the creamed mixture alternately with the milk, beginning and ending with the dry ingredients. If the batter is too thin, you may need to add just a bit more flour.
    5. Drop from teaspoons onto a baking sheet; then bake at 350° F for 10 to 12 minutes.
    6. When fully baked, remove the cookies from the cookie sheet, and allow them to cool on a wire rack.

    Then Make the Whoopie Pie Filling

    1. In a large mixing bowl, mix together the softened butter, vanilla extract, and almond extract.
    2. Add the milk to the mixture.
    3. Slowly add the powdered sugar to the mixture, mixing it in as you go. You want a good consistency, not too runny or the cookies will slide apart; you want the icing thick enough to stay on the cookie but not so thick that it breaks the cookies apart when trying to spread it. Once everything is mixed together, the icing should be smooth and creamy, free of any lumps.
    4. Put the cookies together with this filling to form chocolate sandwich cookies.

    And that’s it! They’re ready to enjoy, and boy will you enjoy these cookies. My mouth is watering just thinking about them.

    Expert Tips and Recipe FAQ’s

    Why are my whoopie pies flat?

    This is why I mention that you may need to add just a bit more flour. Depending on the flour you use, your dough could be quite thin, and you don’t want it to be so thin that it’s falling off the spoon. It should scoop quite nicely without running off the spoon. If your batter’s too thin, your cookies will be flat.

    Yes, of course! I wouldn’t recommend more than a day ahead of time, but yes, you can make them the day before and they’ll be just fine. You may, however, want to store them in the fridge if you add the filling the day before, since the icing has milk.

    How to make my grandma's family-favorite recipe for chocolate whoopie pies. Soft cookie sandwiches with vanilla buttercream filling.

    Whoopie Pie Dough:

    • 1 cup unsalted butter (softened)
    • 2 cups cane sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 3 3/4 cups all-purpose flour
    • 2 teaspoons baking powder
    • 6 tablespoons unsweetened cocoa powder
    • 1 teaspoon salt
    • 1 cup whole milk

    Whoopie Pie Filling:

    • 2 tablespoons salted butter (softened)
    • 1/2 teaspoon vanilla extract
    • 1/2 teaspoon almond extract
    • 1/2 cup whole milk (or heaving whipping cream)
    • 3 cups powdered sugar
    1. Pre-heat the oven to 350° F.

    2. Cream (or mix) the butter and sugar together.

    3. Then add the eggs and vanilla, mixing well.

    4. Whisk or sift together the flour, baking powder, cocoa powder, and salt.

    5. Mix the dry ingredients into the creamed mixture alternately with the milk, beginning and ending with the dry ingredients. If the batter is too thin, you may need to add just a bit more flour.

    6. Drop from teaspoons onto a baking sheet.

    7. Bake at 350° F for about 10 to 12 minutes.

    8. When fully baked, remove the cookies from the cookie sheet, and allow them to cool on a wire rack.

    Whoopie Pie Filling:

    1. In a large mixing bowl, mix together the softened butter, vanilla extract, and almond extract.

    2. Add the milk to the mixture.

    3. Slowly add the powdered sugar to the mixture, mixing it in as you go. You want a good consistency, not too runny or the cookies will slide apart; you want the icing thick enough to stay on the cookie but not so thick that it breaks the cookies apart when trying to spread it. Once everything is mixed together, the icing should be smooth and creamy, free of any lumps.

    4. Put the cookies together with this filling to form chocolate sandwich cookies.

    Why are my whoopie pies flat?

    This is why I mention that you may need to add just a bit more flour. Depending on the flour you use, your dough could be quite thin, and you don’t want it to be so thin that it’s falling off the spoon. It should scoop quite nicely without running off the spoon. If your batter’s too thin, your cookies will be flat.

    With a hint of cinnamon and a little bit of applesauce, a stack of apple cinnamon buttermilk pancakes screams all things fall.

    • 1 1/4 cups all-purpose flour
    • 1/2 teaspoon baking soda
    • 2 teaspoons baking powder
    • 1 teaspoon ground cinnamon
    • 3/4 teaspoon salt

    1. Whisk together the dry ingredients, including the flour, baking soda, baking powder, cinnamon, salt, and sugar in a large mixing bowl.

    3. Add the applesauce, buttermilk, and canola oil to the well; then stir just until moistened.

    4. Lightly spray a griddle with cooking spray, and heat to a moderate temperature over low to medium heat.

    5. Spoon the pancake batter onto the hot griddle, and cook until the tops are covered with bubbles and the edges turn golden brown.

    6. Flip the pancakes and cook the other side. Cook until the pancakes are golden brown and cooked through.

A Cheesy Baked Frittata is perfect for breakfast, brunch, or dinner and incorporates fresh veggies like onion, peppers, and tomatoes.



    Harvest time is the perfect time to make this particular frittata. It’s packed full of flavor with fresh chopped peppers and tomatoes. Queso Fresco also adds quite the cheesy punch.

    • 10-12 eggs
    • 1 cup heavy whipping cream
    • 3-4 small to medium peppers (chopped)
    • 1/2 medium onion (chopped)
    • 2 to matoes (chopped)
    • 5-6 slices ham
    • 10 oz. Queso Fresco
    • Salt & Pepper
    1. Pre-heat oven to 350°.
    2. Wash and chop peppers, onion, and tomatoes. Set aside.
    3. Beat eggs and whipping cream together in medium sized bowl. Add a dash of salt and pepper.
    4. Tear ham into bite-sized pieces and add to egg mixture.
    5. Add chopped veggies.
    6. Crumble Queso Fresco into mixture.
    7. Pour into greased, oven-safe skillet, and bake at 350° for about 1 hour, or until eggs are set and cooked to temperature.
    8. Serve while warm and enjoy!

    It’s funny, creating this recipe kinda happened by accident. I was actually making my grandma’s lemon poke cake recipe, and I thought I had all the right ingredients. I’d even remembered to pick up the cake mix, which is usually the one thing I forget.

    Not so. This time I forgot to get a lemon pudding mix. Not to be deterred, I decided to make it anyway, only in a slightly different way. My guys ended up loving this lemon poke cake, claiming it’s one of the best cakes I’ve made in awhile.

    Ok, so I’ll be honest. Any lemon cake, especially this lemon cake, is even better the next day. Aging an extra day suits a good lemon cake. So, if you can hold out, I recommend making it the night before and enjoying the next day. Just my two cents.

    Instead of an instant pudding mix and water, I decided to substitute lemon juice and a lemon extract we had on hand. Now, here I could have kicked myself again because if I’d been thinking clearly, I would have used my Lemon essential oil. But I wasn’t, so extract it was. Hey, it still turned out to be a very scrumptious cake.



    It is a bit of a heavier cake, so a small slice will do. I could have almost made this in a bundt pan, as the texture really reminded me of a pound cake. A regular 13×9 pan will do, though.

    Cake:

    • 1 yellow cake mix
    • 4 eggs
    • 3/4 cup lemon juice
    • 3/4 cup canola oil
    • 1 tbsp. lemon extract (or you can substitute a smaller amount of Lemon essential oil)

    Icing:

    • 2 cups powdered sugar
    • Juice of 2 lemons (or about 6 tbsp. lemon juice)
    1. Mix cake mix, eggs, and lemon juice, beating for 2 minutes. Add canola oil and lemon extract, and beat for another 2 minutes.
    2. Bake at 350° for about 30-40 minutes in loaf, bundt, or cake pan (I used a 13×9 pan).
    3. While cake is baking, mix up icing.
    4. When cake is done and while still hot, prick with fork all over.
    5. Spoon on icing, spreading over entire cake.
    6. Serve and enjoy!

    If you’ve ever been to Colorado, you know how beautiful it truly is. Our last trip to Colorado, with no plans and every road an adventure, inspired this collection of roads, by-ways, and 4×4 trails in that beautiful state we love so much. And while it may not be a comprehensive list, these are a few of the scenic roads in Colorado that we’ve discovered, taken, and enjoyed so far.

    1. Mount Evans Scenic Byway

    The road to Mount Evans is the highest paved road in North America. At the end of the 14 mile trek up the mountain filled with switchbacks and gorgeous, breathtakingly beautiful views, you’ll find yourself at 14,265 feet in elevation. There are no guard rails and hardly any shoulder room. Along the way, you’ll definitely want to stop and take in the Mount Goliath Natural Area and Summit Lake Park. Beware of marmots, Rocky Mountain Bighorn Sheep, and Mountain Goats, all of which are absolutely beautiful in their natural habitat.

    2.  Independence Pass via Highway 82

    The highest paved mountain pass in Colorado, Independence Pass is filled with incredible mountain views, switchbacks, and steep climbs. Closed in the winter, the road is also closed to oversized or overweight vehicles, so you may want to re-think taking that camper up the pass. Keep your eyes peeled for the beauty of Twin Lakes, Mount Elbert, the old ghost town of Independence, and the Roaring Fork River. It’s a drive worth taking!

    3. Medano Pass Primitive Road

    Medano Pass Primitive Road winds through the eastern part of Great Sand Dunes National Park, through Great Sand Dunes National Preserve, through a canyon, and up over Medano Pass at 10,000 feet in elevation. The road meets Highway 69 in the Wet Mountain Valley. This road is for high-clearance, four-wheel drive ONLY! Part of the road is sand, and tire pressure may need to be dropped until you come to the rocky portions of the road, in which case you need your own air compressor to air your tires back up. There are 21 roadside campsites in Great Sand Dunes National Preserve, a few of which are more secluded than others, making for some really amazing dispersed camping opportunities. Not only do you get amazing views of the eastern side of the sand dunes and the mountains (along with less crowded places to walk to the creek and the dunes), but the canyon itself is quite beautiful with several creek crossings and wildlife. Mud holes are abundant, but drivers really do seem to watch out for each other. You can check road conditions through the National Park Service.

    4. Million Dollar Highway – U.S. Route 550

    U.S. Route 550 is referred to as the Million Dollar Highway. I’ve read that it’s called that for 2 possible reasons: 1) the million dollar views afforded on every bend and turn of this amazing road or 2) you couldn’t pay some drivers a million bucks to drive this route again. After driving this route with my family, I can see why some might feel that way; it’s a little scary at times! But is it ever worth the drive. The road winds through valleys and mountains from Montrose, Colorado all the way down through Durango into New Mexico, taking you through towns like Ouray and Silverton. And if you happen to be in Silverton of a morning, be sure to stop in at the Kendall Mountain Cafe for the best breakfast you’ve ever had. The stretch between Ouray and Durango was my particular favorite part of the highway, leaving us with glimpses of old mines and mining shacks, 4×4 mountain roads (one of which we drove to find a campsite for the night in the Lizard Head Wilderness area), beautiful mountain passes, waterfalls, switchbacks, and more.

    5. Crystal River Road

    Outside the town of Marble, Colorado (one of our favorite places on earth), is an unpaved shelf road that follows the Crystal River through the Crystal River Canyon. Photos just don’t do this beautiful area on the edge of the Maroon Bells-Snowmass Wilderness, justice.

    The road is an old mining road that’s accessible only by high-clearance, four-wheel drive vehicles or ATV’s during the summer. Along the way is the beautiful Crystal River, Lizard Lake, gorgeous mountain views, waterfalls, Crystal Mill, and the ever so peaceful town of Crystal, Colorado, where you can buy a few books, browse through a gift shop, meander through the semi-ghost town, and maybe even rent a cabin for the night.

    There’s no electricity, but there is a small stream to keep your bottled drinks cold. Crystal River Jeep Tours in Marble operate daily tours in the summer, giving you the option to visit Crystal, ride the Lead King Basin Loop, and Devils Punchbowl. Or you can make the drive yourself; we made the drive to Crystal Mill and had a blast!

    Oh, and if you’re in Marble for lunch or dinner? Be sure to stop in at Slow Groovin’ BBQ, the BEST (and maybe the only) restaurant in town. I’m tellin’ ya, it’s good stuff.

    6. West Elk Loop Scenic Byway

    Upon leaving Carbondale, traveling through Redstone, and exploring the Marble area, the West Elk Loop winds its way over McClure Pass through orchard valleys, canyon country, the Curecanti National Recreation Area, and back up into the mountains, national forest, and wilderness area beyond Crested Butte. Along the way, be sure to stop at Black Canyon of the Gunnison National Park, a must see place that will take your breath away the moment your eyes take a look over the edge. Stop and take in the waters of the Blue Mesa Reservoir. Beyond Crested Butte, wildflowers await, thousands upon thousands of wildflowers abundant in color and beauty. My favorite part of this road was the unpaved portion beyond Crested Butte through Kebler Pass. At the top of the pass is the Irwin Cemetery. Secluded roadside campsites were abundant amongst gorgeous green ferns and beautiful groves of stately aspens. Though we camped along the route through Kebler Pass, I dream of going back again and camping amongst those beautiful, mysterious groves of aspens.

    7. Old Fall River Road

    A one way, unpaved road takes you through the mountains of Rocky Mountain National Park up to the alpine tundra. Old Fall River Road is 11 miles long but can take half or day or even a whole day to drive, depending on how many times you stop. The gravel road winds through the mountains from Horseshoe Park to Fall River Pass at 11,796 feet in elevation. Incredible views await, and from the Alpine Visitor Center at the top, it’s ever so convenient to then take Trail Ridge Road back down to the bottom.

    8. Trail Ridge Road

    Trail Ridge Road is Rocky Mountain National Park’s “highway to the sky,” and it is absolutely stunning! 48 miles long, the road stretches from Estes Park to Grand Lake, winding through the park and climbing higher and higher into the alpine wilderness, eventually crossing over the Continental Divide. Elk are often grazing or resting on the upper slopes along the road, and nestled between the peaks, you may even catch a glimpse of a beautiful blue mountain lake. Other wildlife to keep an eye out for include moose, bighorn sheep, marmots, pikas, and more.

     9. Peak to Peak Scenic Byway

    The Peak to Peak Scenic Byway, built in 1918, stretches from Estes Park to Blackhawk, Colorado. If you love mining country, mountain views, and quaint mountain towns like Nederland, this is a beautiful road for a drive. We recommend visiting Rocky Mountain National Park’s Wild Basin area, Golden Gate Canyon State Park, Hidee Gold Mine in Central City, and historic cemeteries along the way.

    10. Virginia Canyon Road (aka, Oh-My-Gosh Road)

    When we visited Idaho Springs one day last summer, we took a gravel road up through the mountains and back over to Central City. At times, I was literally thinking, “Oh my gosh!!!,” because the road is amazing but not gonna lie, a little scary in places. Of course, now that I’ve been on various four-wheel drive roads, it doesn’t seem bad at all. It passes by several old, abandoned mines; we are fascinated with these old mines and mining ghost towns, so we loved taking an off-the-beaten-path route back toward Central City.

    11. County Road 265 to FF70 Drive to 71 4/10 Road to 330 to 58 1/2 to 59 to 65 (A bunch of gravel roads through the mountains)

    So, this route may seem a bit confusing, but if you can find County Road 265 beyond McClure Pass and follow these directions, you’ll wind through some of the most beautiful country around, what with gorgeous mountains, stunning lakes, beautiful ranches, and more. Be sure to watch out for cows, though; they roam freely through much of the area.

    12. Ophir Pass 4×4 Road

    This is where we camped off of U.S. Route 550 on our way down to Durango. Ophir Pass Road, or Forest Road #630, is recommended to be traveled by high-clearance four-wheel drive vehicles without a trailer. We found amazing views along this road, though there were signs warning of mine shafts and explosives used for avalanches in the area. We found a little side road, which we took down into a little valley to the river next to an old, abandoned mine. There we found a campsite and set up camp for the night at 10,121 feet in elevation. Part of the Lizard Head Wilderness area, it was one place I’ll NEVER forget.

    Let’s make easy homemade salsa with basil, fresh tomatoes, onion, garlic, and peppers in 30 minutes or less. It’s the best summer or anytime appetizer; enjoy with tortilla chips, on tacos, in scrambled eggs, and more!

    My family could eat salsa for breakfast, lunch, and dinner. Case in point… I made a big bowl of basil salsa, and it was nearly gone by the end of the day. We love all salsas, including fruit salsa!

    With tomatoes and peppers from our garden, I can make tomato basil salsa in no time at all. My tomatoes are all different colors, so they add a lot of color to the salsa, which reminds me of my colorful and fresh mango peach salsa recipe.

    For awhile now, I’ve had an obsession with basil. I put it in my eggs, on grilled cheese, on tomatoes, on chicken, on our pizzas, and more. Basil has sorta become a staple in my house. So, it’s only natural to make fresh basil tomato salsa.

    Why You’ll Love This Recipe

    • The best part about this salsa recipe is, once your veggies are washed and seeds removed from the peppers, you plop everything into the blender and let it do all the heavy lifting. I use my Ninja blender, and it works like a charm.
    • I love a chunky salsa, and this salsa has a slightly chunky consistency, perfect for dipping!
    • Most of the ingredients you’ll need are fresh ingredients, and there are only 8 ingredients total.

    Ingredient Notes

    • Onion – I prefer the spicy sweet flavor and crispness of a red onion for salsa.
    • Peppers – You’ll need a green bell pepper (though you can use any color you have on hand, including purple), a jalepeño pepper, and a chili pepper. They’ll need to be sliced open, stemmed, and de-seeded.
    • Tomatoes – Generally, ripe but not wrinkled Roma or Amish Paste tomatoes are best for salsa… Amish Paste have a slightly sweeter flavor than Roma. You can use grape or cherry tomatoes for salsa, but they are going to give a sweeter flavor. You can also mix grape/cherry tomatoes with Roma or Amish Paste to give more depth to the flavor of your salsa.
    • Basil – Fresh is best!
    • Garlic – Again, fresh is best.

    How to Make Salsa with Basil

    There is a bit of prep involved, mainly washing the vegetables you plan to use, then chopping and slicing as needed.

    To make tomato salsa with basil, just follow these steps…

    1. Peel the onion and slice it into quarters.
    2. Slice the bell peppers, jalapeño, and chili pepper open; carefully remove all the seeds.
    3. Chop the tomatoes into quarters.
    4. If using fresh garlic, peel and slice; or you can use already minced fresh garlic.
    5. Place all the ingredients, including the onion, peppers, tomatoes, basil, garlic, and salt, in a blender.
    6. Pulse the blender until the salsa has the desired chunky texture and consistency.
    7. Serve with tortilla chips, on crostini with mozzarella, as a topping for camping walking tacos or beef tacos or chicken tacos, on baked or grilled fish fillets, on scrambled eggs, to make taco chicken, as a topping on CrockPot enchilada casserole, or whatever else your heart desires. This salsa also makes a tasty addition to your next mashed potato bar or baked potato bar.

    Expert Tips and Recipe FAQ’s

    Should I add vinegar to homemade salsa and why?

    Since this is more of a fresh salsa, you don’t need to add vinegar. But if you were canning this recipe, you’d definitely want to make sure there’s enough acidity for canning, and that’s why vinegar or lemon juice is added to canned salsa. I’d refer you to the Ball Book of Canning and Preserving for more information.

    Why is my homemade salsa not red?

    Color may depend on the color of the peppers and tomatoes that you use. Color is also affected by the amount of air that blending adds into your salsa as it blends. So it may not be a bright red color when all is said and done.

    Do I need to peel the tomatoes for salsa?

    Nope. In fact, leaving the peeling will add more texture, more nutrients, and more flavor.

    Should salsa be cooked?

    No, not this recipe. The fresher, the better, especially for flavor.

    How do you store salsa, and how long will it keep?

    You can store it in an airtight container like a mason jar with a lid; be sure to keep it in the fridge. A jar of salsa should keep for 6-7 days in the fridge.

    • Fresh Berries – We use fresh strawberries and blueberries to make red white and blue ice pops.
    • Greek Yogurt – While we prefer to use a honey strawberry flavor, you can use any flavor you want.

    How to Make Red White and Blue Popsicles

    Before you get started, be sure to wash all your berries and pat them dry with a clean kitchen towel.

    Then you can mix and make by following these steps…

    1. Slice or chop the strawberries and crush with a potato masher.
    2. Mix the strawberries with 1/4 cup Greek yogurt and set aside.
    3. Crush the blueberries in a separate bowl.
    4. Mix the blueberries with 1/4 cup Greek yogurt and set aside.
    5. For the first (RED) layer, place 1-2 spoonfuls strawberry/yogurt mixture in each freezer pop mold. How many spoonfuls you add to each layer will depend on the size of your freezer pop mold.

    So This is the Dreaded Mirena Crash (and Burn)

    Experiencing and coping with the Mirena crash, following removal of the Mirena IUD. Symptoms, feelings, and helpful tips for getting through it.

    IUD or intrauterine device

    The Mirena IUD… All I can say is never again. Ever.

    I used Mirena for a very long time. And yes, I’m experiencing the Mirena crash at this very moment and have been for the last week and a half, though I really didn’t know exactly what I was experiencing until I started to do a little more research and reading. 

    I can say that I wish I’d researched the IUD more before deciding to go down that path. I wish I’d been more concerned about my health when I was younger, more concerned with living a more natural lifestyle.

    Now that we do care more, we’re also getting a little older; I’m no spring chicken. And though my family may be shocked to read this (if they read this), we’re also planning to try for another baby (more on this in a near future post, I promise).

    We weren’t going to tell anyone and just keep our secret all to ourselves, but Dan and I both decided maybe I should write about this and share my story.

    Mirena removal side effects seem to be something that many women experience, but if they’re like me, they may not fully be prepared for them or even know they’re coming.

    What Causes the Mirena Crash?

    In short, the Mirena Crash is due to hormone imbalance following Mirena removal.

    Now that I’m experiencing the crash, I’m seriously wondering if some of the problems I’ve experienced while having Mirena as a form of birth control have been due to that little foreign contraption hangin’ out in my uterus. So many things make a lot of sense when I think about it.

    For the longest time, I’ve woke up with night sweats, had severe abdominal pain and issues with what I thought was my colon (nothing found on colonoscopy and other tests), mood swings, hair loss (you wouldn’t believe the amount of hair I’ve cleaned out of my brush time and again), weight gain that just seems stuck no matter how much exercise or eating right I do, etc., etc.

    Mirena Crash Symptoms

    Symptoms of Mirena crash can include the following:

    • Headaches
    • Fatigue
    • Mood swings
    • Anxiety
    • General malaise and feeling of just not feeling good

    Since having the Mirena IUD removed about a week and a half ago, I’ve crashed (and sorta burned). Well, not literally, but I’ve honestly felt like it.

    Headaches

    Oh my word, the headaches. I can honestly say the only headache I’ve had that’s been worse than these headaches was due to altitude sickness because they’re killer.

    No amount of ibuprofen or essential oils help. Nothing. It’s like I’ve gone cold turkey, and I just have to wait for the pain to subside, and it eventually does, but it can last all day.

    The pain is all over my head, even in my neck. I’ve even had pain shoot up from my shoulder/neck area to my head. Awful.

    Fatigue

    I’m sooooo tired! I could sleep 12-14 hours straight.

    Well, I can’t, but if I could… So tired.

    Mood Swings

    One minute I’m fine, the next I feel like I’m raging inside. Well, raging is what my boys call it when you get angry, so I’m going with that.

    I’m irritable and grumpy.

    Anxiety

    I think this has been the worst of it all. I wake up at night, can’t go back to sleep, and feel this elephant of anxiety in my chest, mind, and spirit.

    I can’t put my finger on exactly why I’m feeling that way. There’s no reason to feel anxious.

    I mean, I have the normal deadlines for work, the normal family stuff going on, the normal chores and stuff that need done, but nothing out of the ordinary. I can’t put my finger on why I’m so pent up and worked up!

    It’s like doom, gloom, and anxiety all rolled up into one tightly wound little package. It’s got me feeling like I’m going C-R-A-Z-Y!

    And until I learned about the Mirena Crash, I thought I was going crazy.

    General Malaise and Feeling of Just Not Feeling Good

    I’ve almost felt like I’m coming down with something.

    It’s just a general feeling of not feeling good. It’s yuck.

    So, What Am I Doing about It? Mirena Crash Detox

    (Disclaimer: If you’re experiencing Mirena crash symptoms, please do your own research, and talk to your health care provider. This is simply my own experience.)

    Honestly, I’m just waiting it out and taking a few steps to help myself go through a bit of a Mirena detox.

    • I’m using my essential oils for emotional and general well-being, and I’m so glad I have them.
    • Drinking a lot of water. My water bottle helps me stay well hydrated.
    • Eating more citrus and berries and trying to eat things that will hopefully help me detox just a bit and get through this. My favorite blueberry spinach smoothie and tropical fruit smoothie are just what I’m craving.
    • I’m on a food-based prenatal vitamin.
    • Also, I’m exercising every day, sweating it out; and let me tell you, exercise does wonders for the emotions and for building up a feeling of strength.
    • I’m using my calming bedtime foot rub to both help with feeling anxious, and it helps my restless legs and arms.

    From what I’ve read, I think my body is just freaking out a bit, trying to get back on track, and figure out what is going on and what it needs to do.

    Hopefully, this won’t last much longer; most people say it lasts for a short period of time, about a week or two… A select few have gone longer or more long term.

    I’ve also read that it gets better with menstruation. Can’t say I’ve ever looked forward to that ’til now. Oh but I do.

    I honestly feel like I’m on the tail end of the crash. Yesterday was better, today is ok, tomorrow can only go up from here.

    Why Share All of This?

    I can’t tell you what to do in your personal life, nor do I want to; but I do want you to be aware.

    Do your own research, study up on things before you say yes, know what you’re putting into your body.

    Get to know your own body. Don’t ignore problems.

    Ask your health care provider, and don’t be afraid to go to your visit armed with a whole list of questions.

    Your health really is in your hands.
    Grab on to that responsibility for dear life, and don’t let go.

    Of course, I also write this to share my story and relate to others who’ve experienced it, as well.

    Layered Salad Recipe

    Layered Salad is the perfect salad recipe for family get-togethers, parties, or your next BBQ. Add whatever types of layers you want, including cauliflower, peas, lettuce, bacon, or whatever else your heart desires.

    Salad:

    • 1 head iceberg lettuce (chopped)
    • 12 ounces frozen peas (thawed)
    • 1 head cauliflower (chopped)
    • 6 green onions (chopped)
    • 1 pound bacon (cooked, crumbled, and cooled)

    Dressing:

    • 1 cup sour cream
    • 1 cup Miracle Whip ((or salad dressing))
    • 1 ounce Hidden Valley Ranch Dressing Mix
    • 1/2 cup whole milk
    1. Wash and prep the ingredients.

    2. In a large bowl, layer the vegetables and bacon, making sure all the veggies are dry when you add them.

    3. In a separate mixing bowl or large measuring cup, mix the dressing ingredients, including the sour cream, Miracle Whip, dressing mix, and milk.

    4. Spread the dressing on top of the salad, putting small tablespoons randomly around on top of the salad; then spread out with a spoon or spatula.

    5. Cover with plastic wrap, and chill overnight or all day.
    6. When ready to serve, stir the dressing into the salad, blending well with all the ingredients.

    7. Serve with dinner!

    Breakfast is one of my favorite meals of the day, especially on a holiday or a weekend when we might be a little more free to do as we wish. I love a good omelette, and Dan makes the absolute best omelettes in the world. When you combine Tex-Mex and the ever delicious omelette… well, you’ve got a winning omelette recipe and a yummy breakfast idea.

    Usually we just add a few veggies and a little cheese to our omelettes. Sometimes we’ll add a little ham or bacon. This time, however, we used tenderloin tips we picked up at our local meat shop. The tenderloin adds flavor like no other, especially when combined with different cheeses and vegetables.

    An omelette breakfast is a family favorite. How to make Tex-Mex omelettes using tenderloin tips, vegetables, and cheese. Breakfast just got tastier than ever.

    • 2 eggs/omelette
    • 1 lb. tenderloin tips
    • 5-6 small peppers
    • 5-7 green onions
    • 2-3 to matoes
    • 10 oz. Queso Fresco
    • 2-4 oz. shredded Cheddar cheese
    • 2-4 oz. shredded Monterey Jack cheese
    • Cilantro
    • Avocado
    • Sour cream and salsa
    1. Wash and chop peppers, green onions, and tomatoes.
    2. Sauté peppers and green onions for 3-5 minutes, or until tender; remove and set aside.
    3. Cook tenderloin tips in skillet until done to preference.
    4. Combine peppers and green onions with meat; remove and set aside.
    5. Beat 2 eggs/omelette.
    6. Pour enough egg for 1 omelette into small skillet; sprinkle with Queso Fresco, and cook for 2-3 minutes or until done on one side.
    7. Flip omelette over and cook other side for 2-3 minutes or until nearly done on that side.
    8. Add small amount of filling, including tenderloin tips, peppers, green onions, tomatoes, Cheddar, and Monterey Jack, to half of one side of the omelette.
    9. Close omelette by folding over. Cook for 1-2 minutes more or until cheeses begin to melt and inside of omelette is hot.
    10. Serve immediately with cilantro, avocado, sour cream, and salsa. Enjoy!

That conversation, coupled with the opportunity to create a Tuscan-inspired, spring-inspired Alfredo dish, really motivated me to clear the table of all the school books, all the pencils and markers, and all the tests and papers. In the end, this Creamy Tortellini Alfredo was the clincher in bringing us back to the family table.

    The mission: “Bring Tuscany to your Table”… It has been a lifelong dream of mine to some day visit Tuscany. I’ve only ever seen photos of this beautiful place; in fact, the calendar above my desk is filled with beautiful photos of Tuscany. I can imagine that it must be a very peaceful part of Italy with rolling hills and luscious, beautiful colors… warm and inviting. I can only imagine what the food must be like; I’m certain if I ever visited Tuscany, I’d probably never want to leave.

    It’s that same peaceful feeling that I wanted to bring to our family meals (you know, the one when you stare into the photo on your calendar and imagine you’re there breathing in the scents, warm sun shining down, a slight breeze wisping hair about your face). The dinner table should be something to look forward to, a place to catch up, a place to be at home.

    Creating a simple yet warm, inviting table scape was my first priority. And you know, for a table to be inviting, it doesn’t have to be fancy. I’m quite certain I only own 1 complete set of place mats. So, I chose to go the eclectic route, mixing and matching. Adding a plate, silverware, and glasses for each person came next. Of course, what table would be complete without a beautiful centerpiece? For this simple centerpiece, I grabbed my pruning shears and went out to the back yard to cut a few flowers. We have a bush that’s filled with beautiful pink blooms right now, and a mason jar makes the perfect vase for fresh cut flowers.

    After clearing the table and setting it up for the meal, it’s time to make dinner. Again, dinner doesn’t have to be complicated. In fact, this dinner was so simple, easy to make, and delicious, we all agreed it’s going to become a regular meal.

    Creamy Tortellini Alfredo is a rather quick meal. Creating a simpler meal just means you have more time together as a family. To make this dish, cook the tortellini according to package directions. Slice the sausage links and add to a skillet, along with the peas. Once the tortellini has been cooked and drained, add it in with the peas and sausage. Add a jar of Bertolli® Creamy Alfredo Sauce, along with basil; mix together well. Cook for 15-20 minutes, or until the ingredients are well heated.

    This pasta is so delicious with a little Parmesan sprinkled on top. Since we don’t like wine, we paired our pasta with a little bit of sparkling grape juice… It was delicious! It was one meal that even our picky 7 year old loved; he actually asked for seconds and not dessert. How often does that happen?!

    Creamy Tortellini Alfredo

    • 1 pkg. frozen cheese tortellini
    • 8-10 oz. fresh or frozen peas
    • 1 pkg. smoked sausage link
    • 1 jar Bertolli Creamy Alfredo Sauce
    • 1 tsp. basil
    • Parmesan cheese
    1. Cook tortellini, according to package directions.
    2. Slice smoked sausage link/s.
    3. Add peas and sausage links to large skillet.
    4. Drain tortellini and add to skillet, along with Bertolli Creamy Alfredo Sauce.
    5. Add basil and mix ingredients together in skillet.
    6. Cook on low to medium heat for 15-20 minutes, or until heated through.

I can’t even tell you how much I’m loving my vintage cake tins upcycled to DIY light fixtures. They are the first step to a farmhouse kitchen transformation I’m working on.     For awhile now, we’ve had this large, rectangular, gaudy, fluorescent tube light in the ceiling of our kitchen. It honestly made me want to crawl in a shell and hide every time we turned it on because it reminded me of a hospital. It was huge and when you turned it on, it was almost as if an alien spacecraft was beaming through the kitchen ceiling. Ok, maybe I exaggerate, but that’s how it felt.

    Anyway, when opportunity arose, I knew it was time for the gaudy fluorescent tube light to go and something old yet quite charming to take its place. While Pinterest lent to a bit of inspiration for this project, so did my grandma’s old cake tin which sits proudly in my kitchen. When I was a little girl, Grandma had this beautiful blue cake tin; I’m so fortunate to have it and still use it to this day.     Turning the cake tins into light fixtures could not have been simpler; it’s honestly a fairly easy project.

    What You’ll Need

    • Vintage cake tin/s
    • Green Works All-Purpose Cleaner
    • Rags or paper towels
    • Keyless light socket/s – 1 for each light fixture and pre-wired by electrician
    • Electrical cord – enough to reach the electrical box
    • Chain
    • 2 hooks per light fixture
    • Hose clamp/s
    • 1 wooden fence panel, old or new
    • Stain or paint for fence panel
    • Drill
    • Screws
    • Light bulb/s

    The first step to creating light fixtures out of old cake tins is to actually clean them up. Mine were pretty filthy, so I used Green Works All-Purpose Cleaner.

Being 98% naturally derived, this cleaner has a very pleasant smell, not overpowering in any sense of the word. But the fact of the matter is it’s a very powerful cleaner that really shined up my dirty old cake tins, minus a few dents from lots of use and a little rust (although rust adds a little character, don’t you think?).     I’m loving our new to us light fixtures.     Upcycling Inspiration with Green Works

    Green Works is celebrating the power in nature this Earth Day and has enlisted the help of acclaimed metal artist, Rebecca Anders, on another upcycling adventure. In fact, the Oakland based artist is taking the dirtiest, greasiest kitchen materials found in the Bay area and turning them into a sculpture of a daisy.
