    How to Make Baked Potatoes

You’ll need to decide what kind of potatoes you want to use and how best to cook them before setting up a potato bar.

    Ingredients and Substitutions Notes

Potatoes – I prefer to use yellow potatoes, as they make a good baked potato. You can also use russet potatoes. If you’d rather use sweet potatoes over regular potatoes, you can make Instant Pot sweet potatoes.

    How to Cook Baked Potatoes

There are a few ways you can bake potatoes. My favorite way is the microwave; however, if you’re feeding a crowd, you may want to go with either the oven, the grill, CrockPot, or Instant Pot baked potatoes.

    Microwave

Wash and scrub the potatoes. Poke a few holes in each potato with a fork. Put them on a microwave-safe plate, and cook on high for 5 minutes; then flip and cook another 5 minutes. (Keep in mind, cook times may vary, depending on different microwaves.) Allow the potatoes to cool for a few minutes before handling.

    Oven

Wash and scrub the potatoes. Poke a few holes in each potato with a fork. Line a baking sheet with aluminum foil; then on the sheet pan, rub potatoes down with olive oil and sprinkle with sea salt or kosher salt. Place on the baking sheet, and bake at 400° F for at least 1 hour, possibly a few minute longer. (You can also wrap the potatoes in foil and place them directly on the oven rack to bake.) You’ll know the potatoes are done when they can easily be pierced with a fork or knife.

    Grill

Wash and scrub the potatoes. Heat the grill to 350° F. Rub potatoes down with olive oil, and sprinkle with sea salt or kosher salt. Then wrap each potato in aluminum foil, poke a few holes in the foil and potatoes, and place on the grill to cook for probably about an hour. You’ll know the potatoes are done when they can easily be pierced with a fork or knife.

    Air Fryer

Pre-heat the air fryer to 400° F. Wash and scrub the potatoes. Poke a few holes in each potato with a fork. Rub each potato down with olive oil, and sprinkle with sea salt. Cook the potatoes in the pre-heated air fryer for about 45 minutes, maybe a little more, ’til the potatoes are soft and tender when poked with a fork or knife.

    CrockPot or Slow Cooker

Wash and scrub the potatoes. Poke a few holes in each potato with a fork. Rub each potato down with olive oil, and sprinkle with sea salt. Then wrap each potato in aluminu foil, and place in the slow cooker. Cook on low for 6-7 hours, or on high for 4-5 hours. Potatoes are done when they can easily be pierced with a fork or knife.

    Instant Pot

Wash and scrub the potatoes. Poke a few holes in each potato with a fork. Place all the potatoes in a steamer basket down in the Instant Pot. Add 1 1/2 cups of water to the Instant Pot. Place the lid on the Instant Pot, set the valve to seal, press Manual or Pressure Cook, and set to 8 minutes. Allow the Instant Pot to naturally release when done.

How to Set up or Assemble the Ultimate Baked Potato Bar

Gather the ingredients for your potato bar… You’ll need baked potatoes and baked potato bar toppings. Your main work will be cooking the potatoes and prepping any toppings for your guests to choose from.

Baked Potato Bar Ideas and Expert Tips

    • Prep the toppings, adding each topping to a separate dish or compartment for serving. Prepping may involve cooking, re-heating, or simply chopping.
    • Set everything out buffet style, so your guests can create their very own delicious baked potato creations.
    • If you’re hosting a smaller gathering, try using a large charcuterie board with small bowls for a variety of toppings all around a large bowl full of baked potatoes.

    Recipe FAQ’s

What potatoes are best for a baked potato bar?

While I do prefer yellow potatoes or Yukon Gold potatoes, you can use any kind of potatoes you prefer, including Russet potatoes, red potatoes, even purple potatoes if you can find them. Though I will say that yellow or russets make the best baked potatoes.

Can you make baked potatoes and toppings ahead of time?

While you can make the toppings 1-2 days ahead of time, it’s best to cook the potatoes the day of. Baked potatoes are best when eaten soon after cooking. As for the toppings, you’ll just need to store them in airtight containers in the fridge.

How can you keep baked potatoes warm while at a party?

You can either use a buffet server and food warmer. Or you can keep the potatoes in a Crock Pot or Instant Pot on the “Keep Warm” setting.

    Creamy BBQ Chicken Dip

BBQ Chicken Dip, made with cream cheese, is an easy appetizer recipe. Pair it with tortilla chips for a delicious snack your friends and family will love!

BBQ Chicken Dip is one of my family’s favorite snacks for holidays, movie night, Game Day, and more. It makes a great party appetizer too and disappears rather quickly. It pairs well alongside chili cheese fries.

There’s just something about cream cheese, BBQ sauce, and Ranch dressing mixed together. The ingredients come together to form a layered dip that’s absolutely delicious and pairs well with crackers, tortilla chips, even raw veggies.

BBQ Chicken Dip, made with cream cheese, is an easy appetizer recipe. Pair it with tortilla chips for a delicious snack your friends and family will love!

While you can make this in a pie plate, cutting the ingredients by half (and we’ve done this plenty of times), you can also make it, as is, in a 13×9 inch pan… I prefer to layer the ingredients, as listed, in about a 10-inch iron skillet.

It’s a little thicker this way, which is how I prefer this dip to be, with a good, solid layer of cream cheese on the bottom.

If your chicken is already cooked, you can mix this dip up in about 10 minutes. Pop it in the oven for about 20 minutes, and you’re all set.

    • Buttermilk Ranch Mix – I prefer to use Hidden Valley Buttermilk Ranch mix to make Hidden Valley Ranch deviled eggs. It’s easy and convenient.
    • Condiments – You’ll need both mayonnaise and mustard. While mayo makes a lower carb version of these eggs, I’ve also used a dressing like Miracle Whip; but keep in mind, you may not need as much salt if doing so.
    • Dill Pickles – Just mince them up.
    • Bacon – I prefer to cook our bacon with breakfast and save it back in the fridge for use later; but you can also use precooked bacon and just pop it in the microwave when ready. Regardless which bacon you choose, it will need to be cooked and crumbled.

    Expert Tips and Recipe FAQ’s

When is the best time to make bacon Ranch deviled eggs, the day before or the day of?

Personally, I’d rather eat deviled eggs the day of, but with maybe 2-3 hours to chill in the fridge. However, you can make them the day before, and they’ll be just fine. Now, if you are making them the day before, I do recommend crumbling freshly cooked bacon on the day of; if you add bacon the day before, it can get kinda chewy and tough from sitting in the fridge.

How should you store deviled eggs?

Definitely store them in an airtight deviled egg container with a lid, and in the refrigerator. You can also put them on a platter and cover it tightly with plastic wrap.

    Can you freeze deviled eggs?

While you can freeze the yolk mixture, it’s best to not freeze the egg whites because they’ll become quite rubbery in texture.

Definitely store them in an airtight container with a lid, and in the refrigerator. You can also put them on a platter and cover it tightly with plastic wrap.

    Planning Easy Appetizers

When planning easy apps for a crowd, there are 4 things you need to think about.

    1. Timing

What appetizers can sit out, which ones can you make ahead, can you freeze any ahead of time, and are there appetizers that need to be made last minute right before the party or event? Figuring out the timing of making all the appetizers will help you plan an appetizer menu that works for you, not against you. It’ll also help you know how to give people tasks when they ask how they can help.

    2. Serving

How much of each appetizer do you need to make? How many people will be in attendance, and how much will you need per person? Think serving sizes; also think about making extra on the most popular appetizers people love the most.

Once you figure out how many and how much, you’ll need to think about serving dishes, platters, bowls, and such. Also plates, napkins, and utensils needed.

    3. Dietary Restrictions

Yeah, dietary restrictions can be a major bummer, but think about your guests who are living with those food restrictions… Even more of a bummer for them if there’s nothing they can eat. Ask your guests if they have any restrictions, and try to plan a few appetizers or snacks they can enjoy, as well. Think about vegetarian, vegan, gluten-free, dairy-free, etc.

    4. Can You Turn the Party into an Appetizer Potluck?

Instead of doing all the work yourself, ask everyone to bring their favorite snacks, dips, and finger foods. Talk about cheap easy appetizers… Less work for you and everyone involved, and everyone gets to graze on their favorites. It’s a win-win!

    Finger Food Appetizers

Super simple bites and foods you can eat with your fingers… Sometimes I’d rather have the appetizers over the main meal. Your guests will feel the same with this delicious array.

    Bush's Hummus Made Easy Disclosure

Hungry for loaded nachos but don’t feel like going out? I’ve made mention before how much this family loves Tex-Mex, especially chicken tacosbeef tacos, and creamy chicken enchiladas.

Usually, when we’re going out to eat, we’re going for Mexican. Loaded nachos are a favorite all ’round, as is a nice snack of roasted red pepper hummus.

I’ve got a delicious recipe for you that will make you re-think ever using refried beans again.

We had a crazy busy week last week. We had a week filled with doctor’s appointments, a midwife appointment, minor surgery for Dan, and more, not to mention homeschooling and work.

We’re trying to get as much done and meet as many commitments as we possibly can before this baby boy arrives. But by the time the end of the week arrived, we were all beat and needed something super easy to snack on, not to mention something fairly easy to eat for dinner.

As I mentioned, we love roasted red pepper hummus.

We’ll eat it with crackers, tortilla chips, pita bread… It’s a favorite snack around here but also tends to be a bit pricey, meaning we don’t always keep it on hand.

But that has changed since we’ve been introduced to Bush’s Hummus Made Easy. Available at Walmart in 3 delicious flavors (Classic, Roasted Red Pepper, and Southwest Black Bean), it’s also friendly to our budget.

Not only that, but it’s easily made in literally seconds, I kid you not.

All you need is a can of beans, the pouch of hummus, and a food processor or blender (I used my Ninja).

We chose to use Bush’s Garbanzos (or Chick Peas), which happened to be conveniently located right next to the Hummus Made Easy pouches in the store, to mix up a batch of Roasted Red Pepper Hummus Made Easy.

And you know what? In my opinion, it tastes better than the stuff that’s already pre-mixed and packaged in the deli. And it’s cheaper! Win win!

On top of that, it has no artificial preservatives, and it’s made with real ingredients like olive oil, tahini, roasted red bell peppers, and spices.

Even more importantly, it meets my official taste tester’s seal of approval.

There are a ton of recipes on the Hummus Made Easy site, and when I saw a recipe for a 7 layer dip and perused Pinterest just a bit for even more inspiration, I knew I wanted to make some sort of nachos, leading me to the idea of Loaded Nachos, only without refried beans and made with hummus instead.

Honestly, these nachos are all about the layering. You have a layer of tortilla chips, dollops of hummus…

  • Fresh Tomato Salsa with Basil

    Fresh Tomato Salsa with Basil

Let’s make easy homemade salsa with basil, fresh tomatoes, onion, garlic, and peppers in 30 minutes or less. It’s the best summer or anytime appetizer; enjoy with tortilla chips, on tacos, in scrambled eggs, and more!

My family could eat salsa for breakfast, lunch, and dinner. Case in point… I made a big bowl of basil salsa, and it was nearly gone by the end of the day. We love all salsas, including fruit salsa!

salsa with basil in blue bowl with tortilla chips

With tomatoes and peppers from our garden, I can make tomato basil salsa in no time at all. My tomatoes are all different colors, so they add a lot of color to the salsa, which reminds me of my colorful and fresh mango peach salsa recipe.

For awhile now, I’ve had an obsession with basil. I put it in my eggs, on grilled cheese, on tomatoes, on chicken, on our pizzas, and more. Basil has sorta become a staple in my house. So, it’s only natural to make fresh basil tomato salsa.

    Why You’ll Love This Recipe

    • The best part about this salsa recipe is, once your veggies are washed and seeds removed from the peppers, you plop everything into the blender and let it do all the heavy lifting. I use my Ninja blender, and it works like a charm.
    • I love a chunky salsa, and this salsa has a slightly chunky consistency, perfect for dipping!
    • Most of the ingredients you’ll need are fresh ingredients, and there are only 8 ingredients total.
tomato basil salsa in blue bowl with tortilla chips dipped and in bag to side

    Ingredient Notes

    • Onion – I prefer the spicy sweet flavor and crispness of a red onion for salsa.
    • Peppers – You’ll need a green bell pepper (though you can use any color you have on hand, including purple), a jalepeño pepper, and a chili pepper. They’ll need to be sliced open, stemmed, and de-seeded.
    • Tomatoes – Generally, ripe but not wrinkled Roma or Amish Paste tomatoes are best for salsa… Amish Paste have a slightly sweeter flavor than Roma. You can use grape or cherry tomatoes for salsa, but they are going to give a sweeter flavor. You can also mix grape/cherry tomatoes with Roma or Amish Paste to give more depth to the flavor of your salsa.
    • Basil – Fresh is best!
    • Garlic – Again, fresh is best.

How to Make Salsa with Basil

There is a bit of prep involved, mainly washing the vegetables you plan to use, then chopping and slicing as needed.

To make tomato salsa with basil, just follow these steps…

    1. Peel the onion and slice it into quarters.
    2. Slice the bell peppers, jalapeño, and chili pepper open; carefully remove all the seeds.
    3. Chop the tomatoes into quarters.
    4. If using fresh garlic, peel and slice; or you can use already minced fresh garlic.
    5. Place all the ingredients, including the onion, peppers, tomatoes, basil, garlic, and salt, in a blender.
    6. Pulse the blender until the salsa has the desired chunky texture and consistency.
    7. Serve with tortilla chips, on crostini with mozzarella, as a topping for camping walking tacos or beef tacos or chicken tacos, on baked or grilled fish fillets, on scrambled eggs, to make taco chicken, as a topping on CrockPot enchilada casserole, or whatever else your heart desires. This salsa also makes a tasty addition to your next mashed potato bar or baked potato bar.

    Expert Tips and Recipe FAQ’s

Should I add vinegar to homemade salsa and why?

Since this is more of a fresh salsa, you don’t need to add vinegar. But if you were canning this recipe, you’d definitely want to make sure there’s enough acidity for canning, and that’s why vinegar or lemon juice is added to canned salsa. I’d refer you to the Ball Book of Canning and Preserving for more information.

Why is my homemade salsa not red?

Color may depend on the color of the peppers and tomatoes that you use. Color is also affected by the amount of air that blending adds into your salsa as it blends. So it may not be a bright red color when all is said and done.

Do I need to peel the tomatoes for salsa?

Nope. In fact, leaving the peeling will add more texture, more nutrients, and more flavor.

    Should salsa be cooked?

No, not this recipe. The fresher, the better, especially for flavor.

How do you store salsa, and how long will it keep?

You can store it in an airtight container like a mason jar with a lid; be sure to keep it in the fridge. A jar of salsa should keep for 6-7 days in the fridge.

    7. Serve with tortilla chips or whatever your heart desires.

Do I need to peel the tomatoes for salsa?

Nope. In fact, leaving the peeling will add more texture, more nutrients, and more flavor.

How do you store salsa, and how long will it keep?

You can store it in an airtight container like a mason jar with a lid; be sure to keep it in the fridge. A jar of salsa should keep for 6-7 days in the fridge.

    Chicken Dip Pinwheels Appetizer

It’s confession time, though anyone who really knows us already knows this… We couldn’t really give a flip about football. Gasp! I know, right? It’s true.

I mean, here we are right smack dab in the middle of Razorback country, and we couldn’t care less about what the score is. Anyone who asks us how the game went gets that famous deer in the headlights look. I kid you not.

That being said, we do like zipping through the DVR to watch the Superbowl commercials. One of my personal favorites is the VW commercial with little Darth Vader using “the Force” to magically start the car. You know the one, right?

And even though we may not enjoy the big game, we do love us some easy appetizer recipes and snacks, in honor of the big game, of course. Or maybe that’s just our excuse.

We may enjoy the commercials more than the actual game, but when it comes to Superbowl food or Game Day snacks, these chicken appetizers have got it goin’ on. Chicken Dip Pinwheels pack a flavor-filled punch and make the perfect bite-sized party appetizers or snacks.

Every year Superbowl Sunday is my excuse to make a few of our favorites, including Creamy BBQ Chicken Dip. Yum!

This year I decided to switch it up by creating pinwheels inspired by our favorite dip. Pinwheels… Aren’t they the most scrumptious snacks ever?

Fruit Kabobs with a Philly Cream Cheese Chunky Fruit Dip #SpreadtheFlavor

Disclosure for Philly Cream Cheese #shop

Spring has finally sprung, and it brings with it a desire for fresh fruits and veggies.

Fruit Kabobs with a Chunky Cream Cheese Fruit Dip, Recipe from MamaBuzz #SpreadtheFlavor #shop

My boys love when we have fresh berries, kiwi, pineapple, and other fruits for breakfast. So, while Dan made waffles Sunday morning, I dug out the kabob sticks, fresh fruit, and the Philadelphia Cream Cheese Spread I’d picked up at Walmart during my grocery run.

What better way to enjoy breakfast than with wholesome, nutritious fruit kabobs and a creamy yet very chunky fruit dip made out of Philly Cream Cheese Flavored Spreads?

Below you’ll find a printable recipe for the chunky fruit dip. And if you love these fruit kabobs, you may also enjoy this yummy marshmallow fruit salad. And you’ll definitely love these mini fruit pizzas!

Using Philadelphia Flavored Cream Cheese Spreads to Make a Chunky Fruit Dip

Philadelphia Cream Cheese made with real fruit #SpreadtheFlavor #shop

I made the dip by combining an 8 oz. tub of Blueberry Cream Cheese and an 8 oz. tub of Strawberry Cream Cheese. Then I added in fresh fruit, including chopped strawberries, blueberries, and blackberries, along with a teensy amount of powdered sugar to give just a slight bit of sweetness to the dip.

    Chop strawberries #SpreadtheFlavor #shop

The dip made the perfect side to the fruit kabobs and was so creamy, chunky delicious. As I was eating the dip, I could almost imagine using the flavored cream cheese to make a frosting for cupcakes…. something to think about.

Of course, Philadelphia Cream Cheese Spreads also come in other flavors, as well. So, the possibilities for creamy treats are endless.

With flavors like Chive Onion, Garden Vegetable, and Jalapeno, you can make more savory treats, as well. Sometimes I even make garlic parmesan chicken kabobs. Yum!

    Making the Fruit Kabobs

Back to fruit, though. As for the accompanying kabobs, they were super easy to make. The most work was washing and prepping the fruit.

You can use any type of fruit you want; we used strawberries, kiwi, bananas, blackberries, pineapple, and blueberries.

There’s really no rhyme or reason to putting the fruit on; the bigger the chunks the better, though.

The big game will soon be here, and even though we don’t necessarily enjoy football, we usually have a movie night right around that time and enjoy a few of the snacks that go along with a big game party.

I’ll usually make our normal Barbecue Chicken Cream Cheese Dip, and sometimes I’ll make one of the boys’ favorites, “Puppy Chow.” This year, I’m adding something new to the mix…. Taco Bites.

    Appetizer Recipe ~ Taco Bites

Little taco bites snacks are super easy to make, and they contain fresh ingredients, like tomatoes, lettuce, and shredded cheese.

    • 12 corn tortillas (mini size)
    • 1/2 lb. ground beef (fully cooked)
    • 3/4 cup Picante Sauce
    • 1/2 cup cheddar cheese (shredded)
    • 2 cups lettuce (shredded)
    • 1 cup grape tomatoes (chopped)
    • 3/5 cup Sour cream
    1. Fully cook ground beef in skillet and drain. Add Picante Sauce to ground beef and warm.
    2. Warm mini corn tortillas between 2 paper towels on a plate in the microwave, until they become pliable and easier to work with. The next step involves a muffin tin; you’ll need 12 muffin cups. Place each mini tortilla in a muffin cup, working with it to make it fit down in the cup. It helps to add a tablespoon full of beef at this point.
    3. Once all tortillas are fitted into place and beef mixture added, bake at 350° for about 20-30 minutes or until tortillas are crunchy.
    4. Remove from oven, adding cheese, lettuce, and tomatoes. Finish each taco bite off with a dollop of sour cream and serve. Enjoy!

  • Snowman Pimento Cheese Ball Recipe

    Snowman Pimento Cheese Ball Recipe

Knowing that I wanted to come up with a fun appetizer recipe for New Year’s, it just seemed logical to include one of our favorite snacks, pimento cheese. And, of course, it had to have a theme…. so one of my personal favorites at this time of year, a snowman.

    Snowman Pimento Cheese Ball Recipe from MamaBuzz {mamabzz.com}

Dan and I had a lot of fun experimenting with this recipe and came up with it together. We schemed and experimented, adding ingredients until the pimento cheese tasted just right.

Below you’ll find the printable recipe and how to. This recipe is so much fun to make; the cheese ball formed into a snowman is really like an empty canvas just waiting to be decorated.

Homemade pimento cheese ball snowman recipe

My advice is to be creative with the decorating and use what you have. I used black olives for the eyes, mouth, and buttons. Then peppers for the nose, scarf, and hat. The nice thing about pimento cheese is that it was so easy to decorate; everything stuck fast so easily.

When all is said and done, serve Frosty with snack crackers or pretzels, whatever you or your guests enjoy. The nice thing about the decorations is that if using olives and peppers, they’re completely edible and pair well with the cheese. Enjoy!

How to make a snowman pimento cheese ball

    Snowman Pimento Cheese Ball

Festive snowman pimento cheese ball you can serve with crackers, pretzels, or a fresh veggie tray. Perfect for a Christmas party!

    • 16 ounces cream cheese
    • 24 ounces sharp cheddar cheese (shredded)
    • 4 ounces pimentos (diced)
    • 1/4 cup mayo
    • 2 tablespoons vinegar
    • 2 1/2 tablespoons sugar
    1. Mix cream cheese, shredded Cheddar, and pimentos. Add in mayo, vinegar, and sugar, blending ingredients well. Cover and refrigerate overnight.
    2. Remove from refrigerator, and use 2/3 of the mixture to form the base of the snowman. Then use more cheese to shape his head and add that on to the base. Shape and round the cheese ball, adding in bits of the cheese mixture to fill in gaps and make him look like you want him to look.
    3. Now it’s time to decorate. Wash any veggies you’ll be using. Chop olives into longer pieces for the eyes; then chop small bits of olives for the mouth. Olives should stick fast to cheese ball with just a tiny bit of pressure. Slice sliver of orange pepper to look like a carrot nose. Then slice red pepper (or whatever color you prefer) into small strips for the scarf; I found that using smaller strips held better to the cheese. Slice top of pepper and remove seeds. Add to top of snowman’s head for a hat. Chop ends of 2 olives and use for buttons. Add 2 pretzel sticks for the arms.
    4. Finally, add parsley around snowman for garnish. Serve with crackers, pretzel sticks, or whatever snacks you and your guests may enjoy.
    5. (Disclaimer: Always remember to refrigerate snowman when not enjoying as an appetizer or snack.)

Learn how to make easy muffin tin chicken pot pie with Grands biscuits and a creamy chicken and vegetable filling that’s oh so delicious. Makes the perfect appetizer or a fun way to serve up a personal sized dinner with your family!

I was inspired to make this recipe by another recipe we’d made from Pillsbury, Easy Taco Melts. Instead of filling biscuits with taco filling, however, we decided to make them into mini muffin tin pot pies.

muffin tin chicken pot pie on wood cutting board with fork

They turned out pretty yummy and just as much of a hit as my favorite chicken pot pie with biscuits.

    Ingredients and Substitutions Notes:

You’ll need just a handful of ingredients to make these yummy mini chicken pot pies.

    • Boneless Skinless Chicken Thighs – You can also use chicken breasts. Just be sure to cook these beforehand and shred, so they’re ready to go. I like to use my Instant Pot to cook the chicken, then just shred it up while it’s hot.
    • Cream of Chicken Soup – If you want to make these gluten-free, you can also use a gluten-free cream of chicken soup.
    • Frozen Vegetables – I like to use a mixture of peas and carrots with corn. However, if you’d like to add green beans or any other veggies, this recipe is easy to accommodate.
    • Salt and Pepper
    • Grands Biscuits – If you’d like to make these gluten-free, you can mix up gluten-free biscuits and sub the dough for Grands Biscuits.

How to Make Muffin Tin Chicken Pot Pies

Before getting started, be sure to prep by pre-heating your oven to 375° F; then grease a muffin tin with cooking spray and set aside ’til needed.

Then Assemble your Mini Pot Pies…

    1. In a large mixing bowl, mix together the shredded chicken, cream of chicken soup, vegetables, salt, and pepper.
    2. Press each biscuit into a separate muffin cup, pressing the biscuits up the sides to the top of each cup.
    3. Add about 2 spoonfuls of the chicken mixture to each biscuit, and level it.
    4. Bake at 375° F for about 20-25 minutes, or ’til golden brown. Then cool on a wire rack for about 5 minutes before serving.
